Three-Bean Pasta Salad Serves 8-10 1 pound rotini pasta 4 quarts water 4 tablespoons olive oil 1½ tablespoons salt 1 (16-ounce) can garbanzo beans (drained and rinsed) 1 (16-ounce) can red kidney beans (drained and rinsed) 1 (16-ounce) can lima beans (drained and rinsed) 2 tablespoons finely chopped fresh cilantro 2 tablespoons finely chopped fresh flat-leaf parsley 1 cup black olives (pitted and sliced) ½ medium white onion (chopped) 2 cloves garlic (minced) 1 cup cherry tomatoes (halved) ½ red bell pepper (chopped) 10 cups baby spinach 1 teaspoon crushed red pepper flakes ¼ cup chicken or vegetable stock ¼ cup grated Parmesan cheese (Parmigiano-Reggiano) Salt and pepper (to taste)
