Mixed Roasted Potato Wedges

Serves 8-10

5 medium red potatoes (cut into wedges, unpeeled)

5 medium Yukon gold potatoes (cut into wedges, unpeeled)

½ cup olive oil

1 tablespoon seasoning blend (recommended: Grill Creations Chicago Steak Seasoning by Weber)

2 cloves garlic (minced)

2 tablespoons finely chopped fresh dill

Salt and pepper (to taste)

 

  1. Preheat oven to 400º F.
  2. In a large bowl, combine potatoes, oil, and seasoning blend. Toss well. Spread evenly on a sheet pan and roast at 400º F until potatoes are golden brown and tender, approximately 30-40 minutes.
  3. Transfer potatoes to a serving bowl. Add garlic and dill. Season with salt and pepper to taste. Toss well. Serve warm.
