Creamy Roasted Garlic Salad Dressing

Yields approximately 1½ cups

1 cup mayonnaise (or see recipe: Quick ‘N’ Easy Homemade Mayonnaise)

 

½ cup sour cream

1 tablespoon lemon juice

1 head garlic

1 tablespoon olive oil

½ teaspoon onion powder

1½ teaspoons garlic salt

½ teaspoon granulated sugar

¼ teaspoon freshly ground black pepper

1 tablespoon finely chopped fresh chives

 

  1. Preheat oven to 400º F.
  2. Cut approximately ½ inch off top of garlic head. Drizzle head with oil. Wrap in aluminum foil. Place on a sheet pan and roast at 400 º F for approximately 30-40 minutes, or until golden brown and tender. Allow to cool. Separate cloves and peel off skin.
  3. Place roasted garlic cloves in a blender or food processor. Add remaining ingredients (except for chives). Process until smooth and creamy. Stir in chives.  
  4. Pour dressing over favorite salad.
