Grilled Beets and Onions with Italian Dressing and Feta Cheese

Serves 6-8

6 medium beets (peeled and cut into -inch slices) 

2 large Vidalia onions (peeled and cut into --inch slices)  

Olive oil (for drizzling)

Salt and pepper (to taste)  

1 (12-ounce) bottle favorite Italian dressing (or see recipe: Italian Salad Dressing)

cup feta cheese (crumbled)

  1. Place beet and onion slices on a baking sheet. Drizzle with oil. Season with salt and pepper. Toss well to coat.
  2. Place slices in oiled grill baskets. Grill beets for approximately 15 minutes, and onions for approximately 8-12 minutes.
  3. Transfer grilled beets and onions to a large serving bowl. Add dressing. Toss well to coat. Garnish with feta cheese.
