Superduper Strawberry Chocolate Parfaits

Yields 4 (12-ounce) parfaits 

2 cups white chocolate pudding

2 cups dark chocolate pudding

1 cup strawberries (hulled and quartered)

¼ cup amaretto

1 cup crumbled almond biscotti  

Whipped cream topping (for garnish - see recipe: Fresh Whipped Cream under Pies)

Toasted almond slices (for garnish)

Dark and white chocolate shavings (for garnish)

4 chocolate covered strawberries (for garnish - see recipe: Double Chocolate Covered Strawberries or White Chocolate Covered Strawberries under Candies)

 

1. In a bowl, combine strawberries and amaretto. Cover and refrigerate for several hours.
2. Fill bottom of each parfait glass with ½ cup white chocolate pudding. Add a ¼ cup layer of marinated strawberries and ¼ cup biscotti crumbs. Top with ½ cup dark chocolate pudding. (Note: Repeat layers, depending on height of parfait glasses). 
3. If desired, top each parfait with a dollop of whipped cream, and garnish with toasted sliced almonds, dark and white chocolate shavings, and a chocolate covered strawberry. Serve immediately with long-handled spoons.
