Apple-Banana-Nut Salad

Serves 8-10

2½ cups diced apples

3 cups sliced bananas

Juice of 1 lemon

¾ cup raisins

½ cup sweetened condensed milk

¼ cup pineapple juice

½ cup chopped pecans

½ cup chopped walnuts

½ cup sliced almonds

½ cup chopped hazelnuts

½ cup chopped macadamia nuts

1¾ cups shredded coconut

Crisp lettuce leaves (optional)

 

  1. In a large serving bowl, combine apples and bananas with lemon juice (to help prevent oxidation/browning of the fruit). Mix well. 
  2. To the bowl, add raisins, pecans, walnuts, almonds, hazelnuts, and macadamia nuts. Pour sweetened condensed milk and pineapple juice over the fruit and nuts. Sprinkle with shredded coconut. Toss well.
  3. Refrigerate until chilled. If desired, serve on a bed of lettuce leaves.
