Peanut Butter Cookies

Yields approximately 30 cookies

¾ cup all-purpose flour (sifted)

½ cup brown sugar

½ teaspoon baking powder

¾ teaspoon baking soda

¼ cup butter (at room temperature)

1 large egg

5 tablespoons peanut butter

¼ teaspoon salt

 

  1. Preheat oven to 375° F.
  2. In a bowl, combine flour, baking powder, baking soda, and salt.
  3. In a separate bowl, combine butter, peanut butter, and sugar. Beat with an electric mixer until light and fluffy. Add egg. Continue to beat until mixture is well incorporated.
  4. Slowly add dry mixture to bowl of wet mixture. Continue to mix until incorporated.
  5. Place about a teaspoon of cookie dough onto greased cookie sheets (or cookie sheets lined with wax or parchment paper), spacing each piece of dough approximately 2 inches apart. Slightly flatten each mold with a spoon. Bake at 375° F for approximately 8-10 minutes, or until golden brown.   
  6. Place sheets on wire racks and allow cookies to cool for a few minutes before serving.
